What chia seeds are

Chia seeds come from a plant in the mint family and have been eaten for centuries. They are a source of fibre and healthy fats. Because they soak up many times their weight in liquid, they behave very differently from other seeds.

How to soak chia

  1. Stir 3 tablespoons of chia into 1 cup (about 240 ml) of water, milk or plant milk.
  2. Wait 5 minutes, then stir again to break up clumps.
  3. Rest for 10 to 15 minutes, or overnight in the fridge, until it thickens into a gel.

Easy ways to use chia

  • Chia pudding: soak in milk, then sweeten and top with fruit.
  • Smoothies: add a tablespoon, then blend, or let it thicken a little first.
  • Porridge and yoghurt: sprinkle over the top.
  • Baking: mix with water as an egg replacer (1 tablespoon chia plus 3 tablespoons water, rested until gelled).
  • Drinks: stir into water with lemon for a textured drink.

Good to know

Because chia swells, drink enough water, and avoid eating a large spoonful of dry seeds on their own. People who have difficulty swallowing should always soak chia first.
