Almonds, Walnuts and Cashews: Choosing, Storing and Using Nuts

Almonds, walnuts and cashews are three of our most popular nuts. They are easy to enjoy, but they are rich in oils, so how you store them matters.

How to tell a nut is fresh

Fresh nuts snap cleanly and taste mildly sweet. Stale or rancid nuts smell like old paint or crayons and taste bitter. If it tastes off, do not eat it.

Almonds

Snack on them whole, chop for salads and baking, or soak overnight and blend for homemade almond milk. Toasting for 8 to 10 minutes in a moderate oven deepens the flavour.

Walnuts

Rich and slightly bitter. Add to porridge, banana bread, salads and sauces. Walnuts are high in delicate oils, so they spoil quickest. Keep them in the fridge or freezer if you will not use them within a few weeks.

Cashews

Soft and creamy. Eat as a snack, add to stir-fries and curries, or soak and blend into a smooth cream or sauce.

Storing nuts

  • Use a sealed jar or container, away from the stove and sunlight.
  • For more than a month, store in the fridge. For several months, freeze.
  • Let frozen nuts come to room temperature in their container before opening, to avoid condensation.

Buying nuts in larger sizes

If you cook or bake often, larger sizes work out cheaper per kilogram. Split the pack into smaller jars so you open only what you need. Our storage guide explains how.
